Gut-loving Mediterranean Bowl
This nourishing Mediterranean bowl is the ideal energy-sustaining meal. containing plant-based protein, healthy fats, wholegrain carbohydrates, micronutrients and probiotic goodness.
It is so easy to put together and can be made quickly with the option of quick-cook brown rice. This is the perfect meal for multiplying the quantities and batch cook 2 days worth of meals. .
Ingredients (serves 1)
1/2 cup brown rice (or half a pack if using quick-cook)
1/2 a red pepper
1/2 a courgette
1 small carrot
1/2 a tin of chickpeas (washed and drained)
1 tsp paprika
1/2 tsp dried oregano
Salt and pepper
Extra virgin olive oil
1 heaped tbsp good quality Pesto (or homemade)
1 tbsp Pine nuts
1 heaped tbsp raw Sauerkraut
Method
Preheat the oven to 180.
If using a longer-cook rice start cooking the rice first.
Chop all the vegetables into bite-size pieces and place on one half of a large baking tray, mixed with the oregano and a drizzle of olive oil.
Place the chickpeas in a bowl with the paprika, another drizzle of oil and a pinch of salt, mix and add to the other half of the baking tray.
Bake for 20-25 minutes giving a stir halfway through.
Drain the rice, or if using quick-cook rice cook for a couple of minutes according to instructions.
Then assemble your bowl by placing the rice in initially, then the roasted vegetables, the spiced chickpeas and add a big tablespoon of sauerkraut, with a dollop of pesto on top.
Scatter with the pine nuts to finish, and add another small drizzle of olive oil. Enjoy!
